  • dry instant yeast - 2 tsp.
  • wheat flour – 550 g
  • salt – 1.5 tsp.
  • sugar – 1 tbsp.
  • vegetable oil – 1.5 tbsp. l.

  • egg - 1 pc.
  • kefir – 300 g

  1. It is recommended to bake yeast-free black bread in a bread machine using two types of flour: rye and wheat. Dough made from 100% rye flour is very viscous and the device will not be able to shape it.
  2. As a rule, yeast-free white bread in a bread machine with dough made from fermented milk products cannot be kneaded for a long time, otherwise carbon dioxide will evaporate.

Yeast-free bread in a bread machine - a simple recipe


The simplest yeast-free bread in a bread machine is prepared with water, oil, eggs and baking powder. A relatively simple product composition provides a decent product: the bread has a dense crust and a viscous crumb. The dough contains a lot of eggs, which stabilize and soften it; it is recommended to put them in a bucket well beaten.

Ingredients:

  • flour - 500 g;
  • warm water - 350 ml;
  • butter - 50 g;

  • flour - 50 g;
  • water - 30 ml;

  1. For sourdough, mix flour and water.
  2. Leave warm under a towel for 3 days.
  3. Discard the crust, add 100g flour and 50ml water.
  4. After 2 days, remove the crust, add 140 g of flour and leave for 18 hours.
  5. Stir, remove half of the starter, and feed the remaining with 125 ml of water and 140 g of flour.
  6. After 12 hours, place 3 tbsp. spoons of sourdough along with water and oil into a bucket.
  7. Add dry ingredients.
  8. Set: kneading 1 - 14 minutes; rise 1 - 60 minutes; kneading 1 - 5 minutes; rise 2 - 2 hours; rise 3 - 2 hours; baking - 1 hour 20 minutes.

Whey bread in a bread maker without yeast is another option for simple and high-quality baking, based on the work of whey proteins, which quickly activate fermentation, give the product a soft texture and additional protein. To speed up the processes, it is better to heat the whey and add soda only 10 minutes after mixing.

Ingredients:

  • serum - 500 ml;
  • sugar - 30 g;
  • salt - 5 g;
  • soda - 10 g;
  • flour - 700 g;
  • oil - 60 ml.

Preparation

  1. Dissolve salt and sugar in warm whey and pour into a bucket along with the butter.
  2. Add flour.
  3. Turn on the “Quick Baking” mode.
  4. After 10 minutes of kneading, add soda.

We begin to gradually add the flour mixture, helping with a wooden spatula, and then knead our dough with our hands.

When the kefir dough is prepared, let it rise for about 2 hours in a warm place (you can put it near a radiator). When the dough has increased, put the pan in the oven, preheated to 200 degrees for 35-40 minutes.

Then we take the pan out of the oven, remove the kefir bread from it so that the bun does not get damp, cover it with towels, cooling it gradually.

Wheat bread made with kefir turns out very tasty, soft, and porous. There is a light note of fermented milk products. And the bread according to this recipe does not crumble at all:

  • 1.5 tsp. yeast (necessarily fast-acting, I like Saf-moment or “Voronezh”),
  • 50 g semolina,
  • 450 g wheat flour,
  • 2 tbsp. l. granulated sugar,
  • 1.5 tsp. salt,
  • 2 tbsp. l. any vegetable oil,
  • 250 ml kefir or yogurt,
  • 70 ml water.
  • Cooking process:

    The recipe is universal in that the amount of water and kefir can be changed, the main thing is that the total volume of liquid is 320 ml. You can use 200-250 ml of kefir, adding water to the total volume depending on the situation.

    Load the ingredients into the bucket according to your instructions for the bread maker; I load them in the order indicated in the recipe. Bake kefir bread in a bread maker on the main bread baking mode or on the “French” mode. In a Panasonic bread machine, I bake yeast bread from kefir dough on the first “basic”, where the cooking time, including heating of the products, is 4 hours. The crust color is “light”, the loaf size is L.

    First, warm the kefir slightly. Then pour oil and warm kefir into the bread maker bucket. Next, add salt, sugar and sifted flour. Finally, add the yeast and close the bread maker.
