To prepare shanks in soy mustard sauce, no special skills are required. The only small drawback of this dish is that it takes quite a long time to prepare - about three to four hours. But it turns out very tasty, juicy and satisfying. The meat easily comes off the bone, the crust is golden brown thanks to the mustard and soy sauce, and the garlic that is stuffed into the shank complements its aroma and taste!

The knuckle can be served hot with some side dish, or cooled, for example, with beer, or used for sandwiches.

Products: one pork knuckle, two heads of garlic, 2 tablespoons mustard, 3 tablespoons soy sauce, 5 tablespoons mayonnaise, 0.5 teaspoon ground black pepper, 0.5 teaspoon ground ginger, salt to taste.

Cooking baked pork knuckle in soy mustard sauce

Wash the knuckle under running water and dry with a paper towel. Peel the garlic and cut each clove into two or three parts depending on size.

Make deep cuts in the knuckle with a knife and stuff them with garlic.

After stuffing the shank with garlic, wrap it tightly with cotton thread.

Now prepare the sauce. Pour soy sauce into a container, add mayonnaise, mustard, salt, ground ginger and black pepper.

  • pork knuckle weighing approximately 1 kg;
  • one spoon each of honey, mustard and soy sauce;
  • medium carrot;
  • small onion;
  • a few peas of black allspice;
  • head of garlic;
  • a little bay leaf and salt.

Once you are sure that all the ingredients are available in your kitchen, you can start preparing a delicious lunch.

  1. The knuckle should be cleaned of any remaining bristles, singed if necessary, and rinsed thoroughly in running water. Then the meat is placed in a large saucepan and water is poured. Its level should be several centimeters higher than the shank.
  2. The pan must be placed on high heat and wait until the water boils. After this, the fire is reduced to a minimum level, and the foam is removed from the surface of the boiling water. The pork should be cooked over low heat for an hour and a half.
  3. Then put peeled carrots and onions into the pan, throw in bay leaves, pepper and salt to taste. Together with vegetables and spices, the pork is boiled for another hour over low heat. The meat should soften well during cooking.
  4. When an hour has passed, the shank is taken out of the pan and neat cuts are made in it, small cloves of garlic are inserted into them.
  5. Prepare a baking dish and cover it with a layer of foil. Place pork on foil.
  6. Now you need to prepare the dressing. To do this, combine mustard, honey and soy sauce in a small container and mix until a homogeneous composition is obtained.
  7. The entire surface of the shank is well lubricated with the prepared sauce. The pork is then wrapped in the foil that was used to cover the pan and placed in the oven. Baking time – 60 minutes at a temperature of 200 degrees. It is advisable to unroll the foil 10–15 minutes before the end of baking, then the meat will be covered with a pleasant golden brown crust.

That's all, the delicious dish is ready. You can serve the shank to the table in different ways, it all depends on your desire. You can place it on a dish whole, or you can cut it into small pieces, garnish with herbs and pour over your favorite sauce, season with horseradish or mustard. Knuckle with honey and soy sauce

There is another interesting option for baking pork knuckle: it can be seasoned with liquid honey and soy sauce. These products will give the pork a pleasant rich taste and it will become much more tender. For the recipe we use:

  • kilogram pork knuckle;
  • small head of garlic;
  • a couple of tablespoons of liquid bee honey;
  • a few tablespoons of soy sauce;
  • a little spice.

The cooking method is not too different from that described in the previous recipe.

  1. The prepared and boiled pork is laid out on two layers of foil. (The sheet of foil should be wide enough to completely wrap the knuckle).
  2. The garlic cloves are peeled and cut into thin pieces. Make cuts in the shank on all sides and carefully insert the garlic into them.
  3. Pour liquid honey onto the shank. At the same time, it is not necessary to turn it over - the honey will still flow down and cover the entire surface of the shank.
  4. Then the dish is generously poured with soy sauce and wrapped in double-layer foil.
  5. Pork is cooked in the oven at a temperature of 200–220 degrees or in a slow cooker in baking mode. Baking time: from an hour to an hour and a half.

Now you can serve delicious pork for lunch! Vegetables, fresh or prepared according to various recipes, are best suited for a side dish.

  1. For roasting, use the pork butt because it has more meat. The front part is not as meaty and is more suitable for jellied meat recipes.
  2. It is advisable to choose young pork. It will be easier to clean it from bristles, and it will turn out juicier and softer.
  3. After the pork and vegetables are cooked, do not rush to pour out the broth. Based on it, you can prepare an excellent first course - a spicy soup, rich borscht or aromatic pickle soup.
  4. An excellent side dish for pork is fried or stewed assorted vegetables. Feel free to choose any recipe you like for a side dish. You can also pour mayonnaise over the vegetables and bake them along with the pork.

How to cook shank in a slow cooker:

Choose a medium-sized shank so that it can fit in your multicooker. Before cooking, it must be washed under running water and scraped thoroughly with a knife. Next, put it in a multicooker, fill it with water and cook for 1.5-2 hours in “soup” mode.

This is a very important, I would even say, key moment of preparation. The fact is that if the shank is baked without preliminary cooking, its skin will be “rubbery” and practically inedible. But if you boil it first, it will be soft and very tasty.

After the shank has boiled, you need to drain all the broth (but not into the sink, of course, we will need it later). Leave the shank in the multicooker bowl. Pour soy sauce and the same amount of broth to the bottom, add spices (I add dried paprika pieces or carrots). Turn on the “baking” mode for 30 minutes. During the cooking process, you need to turn the shank over so that it is evenly stewed in soy sauce. If the liquid has evaporated, add more soy sauce and broth in equal proportions. At the end of cooking, you need to mix the starch with 0.5 m.st. boiled chilled water and pour into the sauce (so it thickens slightly).

In my family, only jellied meat was always prepared from the shank, because it is in this part of the pork carcass that the most useful and highly gelling substance is found, from which it freezes perfectly. There is a name for the meat part of the shank - hazel grouse, great for broths and stewing, but that’s not what we’re talking about today.

1. Place the prepared pork knuckle on a sheet of food foil (at least 50 cm so that you can wrap it well without the sauce spreading).

3. Now pour liquid honey over our shank. The lower part does not need to be turned over on purpose, the honey will flow down anyway and it will marinate perfectly.
